Ingredients:

  • 2 peaches, sliced

  • 1 tangerine, peeled

  • Cherry tomato medley, halved

  • Spring mix lettuce

  • 2 sprigs of fresh basil, julienned

  • 2 sprigs of mint leaves

  • Burrata

  • Crushed pistachios

  • Olive oil

  • 2 tbsp white wine

  • Red pepper flakes

  • Balsamic reduction

  • Salt

  • Cracked pepper

Directions:

Sauté the Peaches:

  • In a sauté pan, heat a drizzle of olive oil over medium heat.

  • Add the sliced peaches and cook on both sides until golden.

  • Deglaze the pan with white wine and remove from heat.

Assemble the Salad:

  • In a serving bowl, combine the spring mix lettuce, cherry tomatoes, sautéed peaches, tangerine, basil, mint, burrata, and crushed pistachios.

Finish and Serve:

  • Top the salad with red pepper flakes, cracked pepper, salt, a drizzle of olive oil, and balsamic reduction.
