Creamy Chicken & Shrimp Pasta

After a hectic day at work and a mind-numbing commute home, there's something so soothing about unwinding with a bit of culinary therapy. Today, I'm sharing a recipe created out of my love for pasta – a creamy and flavorful creation that upgrades this after-work comfort meal. Join me in taking a pause, setting the perfect vibe with music, and indulging in a well-deserved moment of relaxation while cooking this dreamy pasta together. Turn the kitchen into a haven and savor the simple joy of creating something delicious after a busy day.

Ingredients:

  • 4 chicken breasts, flattened

  • 1 lb shrimp, peeled and deveined

  • 16 oz fettuccini pasta

  • 2 cups mushrooms, sliced

  • 4 cloves garlic, minced

  • Fresh oregano, chopped

  • Fresh parsley, chopped

  • 1 cup unsalted butter

  • 2 cups heavy whipping cream

  • 2 cups fresh grated Parmesan cheese

  • Salt and pepper, to taste

  • Fresh parsley, chopped, for garnish

Prep

• Flatten the chicken breasts using a meat mallet for even cooking.

• Peel and devein the shrimp.

• Slice the mushrooms, mince the garlic, and chop the fresh parsley.

Instructions:

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil.

    • Cook the fettuccini pasta according to package instructions until al dente.

    • Drain the pasta and set aside.

  2. Cook the Chicken and Shrimp:

    • Season the flattened chicken breasts and shrimp with salt, pepper, and other seasonings of your choosing, then drizzle a small amount of olive oil to help with coating.

    • In a large skillet, melt 2 tablespoons of butter and 1 tablespoon of olive over medium-high heat.

    • Saute minced garlic for 1 minute, then toss in chopped oregano.

    • Cook the chicken breasts for about 4-5 minutes per side or until cooked through.

    • Remove the chicken from the skillet and set aside.

    • In the same skillet, add another 2 tablespoons of butter, 1 tablespoon of olive oil, minced garlic, and a sprinkle of chopped parsley.

    • Cook the shrimp until they turn pink, about 2-3 minutes. Remove and set aside.

  3. Prepare the Creamy Sauce:

    • In the same skillet, add the remaining butter and sauté the mushrooms and oregano until they are softened.

    • Add minced garlic and cook for an additional 1-2 minutes until fragrant.

    • Pour in the heavy whipping cream, stirring continuously.

    • Add the grated Parmesan cheese and continue stirring until the sauce thickens.

  4. Combine Everything:

    • Slice the cooked chicken into thin strips.

    • Add the sliced chicken, cooked shrimp, and drained fettuccini pasta to the creamy sauce.

    • Toss everything together until well coated in the creamy sauce.

    • Adjust salt and pepper to taste.
